Taco Party

I realize that today is Saint Patrick’s day, and there is absolutely nothing Irish about tacos, but since I don’t have any Irish recipes to share, I’m going with the tacos.

My friend Jenna came up with the idea for a taco party when she saw how many tacos I’ve been eating lately. I thought it was a great idea and my vegan friends are so creative with food that it was a lot of fun – and everything was super delicious!!

 

The party started off with my famous 5 layer dip! Refried beans, guacamole, sour cream, salsa and cheddar cheese. (All vegan of course!)

 

Karyn made cheesy kale and lentil tacos with olives.

 

Jenna made creamy kidney bean tacos with shredded zucchini.

 

Deana made black bean mango tacos.

 

I made black bean zucchini tacos. The recipe is from Appetite for Reduction.

 

Venkat made cornbread.

 

My plate overflowed with tacos!

 

Rachel made Mexican Hot Chocolate cupcakes from Vegan Cupcakes Take Over the World.

 

Jen G made a chocolate cake with mint icing. Someone took a piece before I got to it with my camera!

Jen also made super yummy guacamole and brought salsa. Jen C brought all the taco fixin’s – lettuce, onion, tomatoes, olives, etc. 

 

This was such a success that I think I’ve decided to make an upcoming Montclair Vegans potluck a taco party

    YES! i think you should have a montclair vegans taco party. so bummed we couldn’t come out this. everything looks so good!
