Cookbook Project Week 21: Vegan Express

I got Vegan Express by Nava Atlas in 2008 when it was first released. It used to be my “go-to” cookbook for dinner, but for some reason I haven’t opened it in a while. I think the reason is that so many vegan cookbooks have been released since then that my Ikea Billy Bookcase is now overrun with books. I realized that it was time to pull Vegan Express back off the shelf and start cooking from it again.

 

All of the recipes in Vegan Express are quick and easy to make, which makes this the perfect after work, week night cookbook. All of the recipes are creative and delicious too. What really amazes me about all of the cookbooks I have is the wide variety of foods and creativity that goes into each one. I never see the same recipe twice. How do people think up all of these wonderfully different food combinations?!

 

I’ve cooked from this book many times, and I decided to try a few recipes that I hadn’t made before. I was actually surprised by the amount  of recipes I hadn’t tried – I had just been making the same meals over and over again before? Shame on me! I was missing out on so much deliciousness.

 

It’s asparagus season, so I made Creamy Pasta with Asparagus and Peas. Only I didn’t use peas. I went to pull the bag of frozen peas out of the freezer and noticed a little bit of frozen edamame left in a bag I bought about a month ago, so I used it instead. It was a nice substitution and worked out really well with the asparagus and sun-dried tomatoes. And of course, I used brown rice pasta instead of wheat. Doesn’t that look like a beautiful and colorful plate of spring-time food?

 

Next up was Thai Tofu with Pineapple and Veggies. This meal was so good that I felt sorry for vegans who don’t own this cookbook and omnivores who are afraid to try tofu. I was so happy that the recipe made enough food for me to take the leftovers to work the next day for lunch.

 

And because I love Thai inspired food so much I made Thai Steamed Green Garden with Coconut-Peanut Sauce.  Coconut peanut sauce – enough said. (Oh yeah – the veggies and tofu were pretty good too!)

 

There were more recipes in this book that I wanted to make, but just didn’t have enough time to cook this week, so I’ll be revisiting this book again in the future.

Once again I’m the rounds around the internet!  Here’s an interview I recently did with Jen Chaky, the owner of Go Lightly, for her blog:

 

If people are worried about not getting enough protein on an all plant-based diet, what do you say to them?

Unfortunately we live in a protein obsessed society. The idea that we need to get protein from meat is a myth. Most Americans eat a lot more protein from animal-based sources than they actually need, and this can lead to many health problems such as heart disease, diabetes cancer.
Obtaining protein from plant-based sources is ideal because they don’t contain the cholesterol and fat that can be found meat and dairy sources, and eating too many plants doesn’t come with the same health risks that eating too many animal products does. Protein is abundant in plants. Foods like beans, soy, nuts and grains are all high in protein, but it can also be found in vegetables. 100 calories of broccoli has more protein than 100 calories of beef! To determine the amount of protein you need, multiply your weight by .36. The number you get is the amount of protein in grams that you need in a day. Chances are you are eating more protein than you realize.

 

Is a vegan diet safe for everyone?

Yes, veganism is safe for everyone. In fact, a plant-based diet is really the key to ideal health. Plant based foods are full of all of minerals and vitamins we need to stay healthy. Plants contain things our bodies need for optimal health, such as fiber and phytonutrients, that can’t be found in animal-based foods.

 

What are three tips you can offer someone getting started on a vegan diet?

1. Don’t be afraid to try new foods. People eating the Standard American Diet often tend to get stuck in a food rut and they rarely eat anything new. Most vegans are more open minded and eat wider variety of foods than omnivores. Once you remove the meat and dairy products from your plate, you’re actually opening yourself up to a whole new world of eating.
2. Don’t rely on processed foods and mock meats. Processed foods are okay every once in a while, but eating whole foods – vegetables, fruits and grains – is the best way to go for optimum health.
3. Surround yourself with supportive people. Not everyone will want to support your new diet and lifestyle. Be patient with them, but also look for like-minded people to spend time with. There are many vegan groups on Meetup.com and there are quite a lot of vegan communities online, such as ThePPK (Post Punk Kitchen).

 

You help many people make healthier dietary transitions. What do you find are people’s biggest obstacles? And what do you suggest for them to help them overcome them?

I often work with people who want to change everything at once and know everything there is to know immediately. This is an easy way to overwhelm yourself and cause burnout. I always suggest taking things slowly. Add more plants into your diet and slowly remove meat, dairy and cheese. Crowd the old foods out by adding new foods. Don’t beat yourself up for making mistakes. Life is a learning process and change takes time.

Vegan Bake Sale!

That’s right – Montclair Vegans is having another bake sale! This time the proceeds will be going towards Farm Sanctuary and paying for Gene Baur’s Montclair Visit. If you’d like to bake, please contact me to let me know what you’re making. If you can’t bake, please stop by and purchase some yummy treats.

 

The bake sale will be on June 4th at Go Lightly, located at 4 So Fullerton in Montclair. The drop off time for baked goods is between 10:00 and 11:00pm. The bake sale is from 11:00am until we run out of food! (Probably around 4:30.)  And while you’re there, why not stop inside the store for some vegan ice cream?

Cookbook Project Week 20: The Blooming Platter

Once again, the cookbook of the week is The Blooming Platter by Betsy DiJulio. I don’t usually use the same cookbook two weeks in a row, but since this book is new, I wanted to try out more recipes. And I’m not sorry I did!

 

The main reason I decided to cook from this book for another week was so I could make these carrot cake pancakes. I used spelt flour instead of wheat, and they cooked up perfectly! They were super yummy even though I burnt them a little!

 

These amazing little shells of deliciousness are packed with even more veggies than you would think! These Stuffed Shells are made with onions, shallots, carrots, red peppers, tomatoes, cauliflower and zucchini!

 

I mixed up a big batch of white bean cheese in my Vitamix and made Caramelized Onion and Spinach Quesadillas.

 

I had lots of cheese left over so I made “White Cheese” Pizza with Kale and Sundried Tomatoes. I added shittake mushrooms and red onion because I had them in the fridge and love mushrooms with my leafy greens. I cheated here and used a premade crust. I actually had two premade crusts so I was able to have pizza again for lunch the next day!

Cookbook Project Week 19: The Blooming Platter with a Giveaway!

I really like this book because the recipes are organized by season and I’m a big fan of seasonal eating. It’s important, because nature knows better than we do what we should be eating at any given time. For example, eating pumpkin in the middle of July just doesn’t make any sense. Since it’s finally warmed up here in NJ, I stuck to Spring and Summer. The recipes are easy so I think it’s a good book for people who don’t cook much, but they’re also creative recipes, so it’s a good book for people who know their way around the kitchen.  In other words, everyone would enjoy these recipes!

 

The first thing I made was Tofu with Tomato Caper Wine sauce, and I served it over kale and quinoa. This was really delicious and it’s a nice take on tofu piccata. I was so happy to have leftovers for lunch the next day!

 

Next I made Chinese Tempeh Lettuce Wraps. Only there was no decent lettuce at the store when I went grocery shopping so I made collard wraps instead. The salad inside the wraps was so good that I was eating in by the spoonful while I was rolling the collards!

 

I also made Southwestern Corn and Tempeh Pie. This is sort of like a southwestern quiche with corn, tempeh and onions baked in a tofu base with a cornmeal crust. The house smelled soooo good while this was cooking! And the dish tasted just as good as it smelled!

 

If you’re a regular reader, you will know that I just can’t pass up a taco recipe. I even allowed myself to eat seitan because I wanted to make them!  Why I have never thought to put jicama on a taco before? Yum!

 

I’m just going to go ahead and tell you that I will be cheating on my cookbook project, and The Blooming Platter will be next week’s cookbook again. I try not to repeat cookbooks but sometimes I get busy and I don’t always get to make everything I want to try in one week. (Carrot cake pancakes, anyone?) Teany

Last week Dennis and I decided to take a day off and spent the day in New York City. We started out with lunch at Teany and then went to Discovery Times Square to see the Pompeii and Harry Potter exhibits. Sadly, Discovery didn’t allow photography inside the exhibits, so you’re just going to have to settle for photos of our lunch.

 

Teany got it’s name because it’s teeny tiny and because it’s in NY and serves tea. I really love the bright green, white and beige color scheme and I think they’ve done a nice job with filling their tiny space. And it really is small. There is no restaurant style kitchen – you can see the food prep going on right on the other side of the counter. Since there’s really only room for one person to prepare food, the service can be a little slow at times, but I think they do a really good job and moving things along at a good pace. This is not a place to go for a gourmet vegan meal, but if you’re in the mood for sandwiches and tea, Teany is the place to be.

Even though they have an extensive menu of hot teas, Dennis and I started out with yummy ice teas. It was just too warm out for a hot drink!

 

I had a vegan chicken salad melt with soy cheese. There’s just something about melted cheese and vegan chicken salad that I love. Yes, I could have made this sandwich myself, but it’s nice to be able to have someone else make it for me for a change.

 

Dennis had the turkey club sandwich. Our friend Keith always raves that this is the best sandwich ever. Dennis said that it was good, but my turkey club is better. Aww shucks!

 

Teany has a lot of vegan desserts, and they carry Vegan Treats cakes, which are usually hard to say no to. But we didn’t have much time, since we had to up to midtown to the museum, so we didn’t have any sweets. We’ll just have to go back again and get dessert!

Cookbook Project Week 18: Vegan Cupcakes Take Over the World

The cookbook of the week this week is Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz and Terry Hope Romero. Okay, okay, I’m sure you all now think that I’ve been sitting around eating cupcakes all week. But I haven’t. What I did was bake four batches of cupcakes for the Worldwide Vegan Bake Sale we had here in Montclair last weekend.

 

 

As I’ve said before, this book changed my life. Before I went vegan I baked constantly, but I stopped when I gave up milk and eggs because I didn’t know how to bake without them. Vegan baking was very “vogue” back then and it was difficult to find good cookbooks. When Vegan Cupcakes Take Over the World came out, everything changed. I started baking again, people starting calling me The Cupcake Queen, and I had requests for my secret recipes. Once people realized that my secret was actually a not so secret book, even my omnivorous friends ran out and bought it, because they knew it was a good book full of no-fail recipes, and they wanted to wow people with cupcakes just as I had wowed them. Vegan cupcakes are everywhere now, and I do believe they really are taking over the world!

 

HLS Juice Bar and Grill

 

Somehow I missed the opening of HLS Juice Bar and Grill in Montclair last November – I only just heard about it a few weeks ago. I had dinner there on Saturday and met with the marketing consultant Lumengo to find out a little bit more about HLS.

As an artsy-type person, I really like the look of HLS. It’s warm and colorful – the kind of place you’d want to spend some time hanging out in. Four large chalk boards line one wall – two of which are dedicated to guest sign-in.

 

HLS is owned by brothers Arinze and Emeka, and they are dedicated to serving food that is not only delicious, but also nutritious. They believe that since you are what you eat, you should be eating the best foods possible. They see the need in today’s society for fresh, wholesome food and are ready to fill it. And you won’t have to worry about paying an arm and a leg for your meal since everything is reasonably priced.

HLS serves fresh juices and smoothies as well as their own line of yummy bottled juices. And they serve leafy greens! You can order a side dish of sautéed spinach or kale to go with your meal. But what I really like is that half of their menu is vegetarian! No more going to restaurants and ordering the one non-meat item on the menu! All of their vegetarian items can easily be made vegan by ordering it without dressing and swapping the dairy cheese with soy cheese. (If it does contain cheese.)

 

Dennis had a Chili Wrap. It was full of brown rice and veggie chili. This is the perfect “Dennis meal”!

 

I had a Soy Thai Chic’n wrap. It was full of mesculin greens, carrots, onions and soy chic’n in a yummy peanut sauce. It was so good I’m still craving it!

 

We split an order of sweet potato fries. These were by far the best sweet potato fries I’ve ever had! Dennis is still telling people how good these were. They weren’t limp and soggy like most people make them. They were nice and firm and crisp. HLS only uses soy bean oil for their fries – they never use canola oil.

 

We also split a Louisiana Lemonade and a Pineapple Ginger Jrinc. They were both super yummy so I can’t pick a favorite. There’s a hint of vanilla in the Louisiana Lemonade that brought a nice depth of flavor, and pineapple and ginger go together so well.

I’ve also tried their Herb Chic’n Cheddar Wrap and their Scrambled Tofu, Soy Sausage and Spinach Wrap, and both were excellent!

HLS is located at 387 Bloomfield Avenue, right across from The Wellmont. There’s also an HLS in Maplewood, located at 1859 Springfield Avenue.

Gene Baur to Visit Montclair

I have great news! Farm Sanctuary’s president and co-founder Gene Baur will be visiting Montclair in July! Mark your calendar!

 

Gene will be talking about his work with Farm Sanctuary as well and selling and signing his book Farm Sanctuary: Changing Hearts and Minds About Animals and Food.

 

The event will take place at 7:00pm on July 30th at the First Congregational Church located at 40 South Fullerton in Montclair. This event is free and open to the public, so please spread the word.

 

Montclair Vegans will be having a bake sale on June 4th at 11:00 outside Go Lightly on South Fullerton to raise funds to pay for the event venue. The rest of the bake sale’s proceeds will go directly to Go Lightly.
