Fresh From the Vegan Slow Cooker Giveaway

I’m a big fan of my slow cooker and an even bigger fan of Robin Robertson, so earlier in the year when I heard that she was working on a new vegan slow cooker cookbook, I began to eagerly await the date of it’s release. Fortunately, the wait is now over, and I am now lucky enough to have a reviewer’s copy of Fresh from the Vegan Slow Cooker in my possession! You might be lucky enough to get a copy too, as I have an extra book to give away to one lucky reader. Details are at the bottom of this post.

This book arrived right on time, as I find that fall and winter are the perfect seasons for slow cooking since the dishes they produce tend to be warm and comforting. I do have a few friends who use their slow cookers quite often in the summertime however, as the slow cooker makes it easy to avoid having to turn their ovens on and add to the already sweltering heat. I’ve already bookmarked about 30 of the 200 recipes in Fresh from the Vegan Slow Cooker (you read that right – 200 recipes!), so my slow cooker will be working overtime this fall.  If you’re new to slow cookers, you’re in luck, because Robin starts the book out with an extensive chapter on slow cooker basics. Everything you could possibly imagine cooking up in your slow cooker is covered here, from snacks and appetizers to dessert and drinks with a plethora of tasty dishes in between. Did you know that you can make pizza in a slow cooker? I didn’t either! You can even make bread, marmalade and cheesecake! Robin’s simple instructions make cooking just about anything in the slow cooker seem easy. She also gives gluten-free and soy-free options, so there’s really something for everyone here.

The first thing I made from Fresh From the Vegan Slow Cooker was African Inspired Peanut Stew.  This is my favorite type of fall dish – sweet potatoes, beans and greens in a creamy peanuty sauce. Perfection!

I made Wine Braised Seitan and Cremini Mushrooms because I’m a total sucker for mushrooms and wine sauce. This is the perfect type of slow cooker meal, as the seitan soaks up sauce really nicely. I cheated here and used store bought seitan instead of making my own. I also added potatoes to the dish because I didn’t feel like cooking up any noodles or rice to serve with the dish later.

This Rustic Potpie Topped with Chive Biscuits is the ultimate in comfort food. I will admit that I was skeptical about the biscuits cooking thoroughly on top of the rest of the dish, but they cooked up quite nicely. I substituted chickpeas for the seitan that the recipe calls for, and they worked really well with the rest of the ingredients. This reminded me of the Swanson’s frozen potpies I was very fond of when I was little, but it was much healthier and, of course, vegan.

This spicy Two Lentil Dal is perfect for those chilly evenings when you’re feeling a little under the weather

And what would a slow cooker book be with out a recipe for Ratatouille? I had lots of squash from a recent co-op share, and this dish was a no-brainer. Simple and delicious!

And if this new book isn’t enough excitement, I was also lucky enough to interview Robin for Chic Vegan today! Check it out!

So now it’s your turn to procure a copy of Fresh From the Slow Cooker! I’m giving away one copy of the book to a lucky winner who will be drawn at random. To enter, simply leave a comment on this post telling me what your favorite slow cooker dish is. The winner must live in the US, and the contest ends at midnight EST on Sunday, September 23rd. Good luck!

  45. Christine says:

Oh, this is an easy question because it is one of two vegan dishes I’ve made in my slow cooker. I say only 2 because I’ve never been able to master the slow cooker. Pressure cooker, blender, chopper, pots and pans, oven, stove….you name it. I love to cook and those tools have always produced lovely results. Now that I’m a vegan (since July 2010) my food has become my medicine. 56 years old, running up to 10 miles and not on any prescriptions and I owe it all to my way of life in the kitchen.
Well, back to answering the question. I can cook a fabulous batch of chick peas from raw. However, my 2nd and most favorite is Italian Lentil and Barley soup. I would LOVE to be able to have Robin in my kitchen teaching me how to expand my repetoire! Thank you!

  46. Allicia says:

I have a slow cooker, but I haven’t used it yet. This cookbook would be awesome for those days when I know I won’t have much time at night to cook.

  47. Jamie Roberts says:

My favorite slow cooker dish is from Robin’s “Fresh from the Vegetarian Slow Cooker:” Winter Squash and Sweet potato soup. I just whipped up a batch of it last week (adding a carrot and some cinnamon to enhance the Fall flavors). I’d love to add Robin’s vegan slow cooker recipes to my library, since I made the leap from O-L veg to vegan a little over two years ago. Thanks!

  48. I love making stews and soups in my slow cooker. I just made some yummy lentil soup last night!

Favorite slow cooker dish? I haven’t tried too many recipes, so I’ll have to go with the old stand-by: chili!

  56. Holly Hutcheson says:

I like to make chilis and curries in my slow cooker. Spicy dishes seem to really benefit from being cooked on low temperature for a long time.

  57. Molly says:

I absolutely LOVE coming home after a long day and knowing that dinner is ready! :-) I love making veggie chili in the crockpot and have made marinara that way as well. Delish! 61. Vivian says:

My favorite and most frequent dish is black bean soup. Delicious!

  62. Rose Varvel says:

I’m hoping to make her Slow Cooker Pot Roast this week!! Looks and sounds yummy.

  64. Muy Vegan says:

I love making vegan chili in a slow cooker. It makes the entire house smell delicious.

  65. My favorite slow cooker recipe has always been split pea soup. Now that I’m cutting out meat, I use a little liquid smoke to keep the smoky flavor that meat used to add. The peas, some grated carrot and onion and water magically combine into my favorite cold weather comfort food. The slow cooker is a plus because I never scorch the soup. I have a couple of Robin Robertsons’ other cookbooks, so I know this cookbook will be greatly appreciated and used often!

  69. Eric says:

I like making beef-stew like dishes with seitan in the slow cooker. Lately I’ve also been using it to make (oddly enough) Thai tea.

  70. Ruth Reynolds says:

My 16 year old loved the African inspired peanutty stew I made friday so much, she wanted to take some for lunch this week. I talked her through it today and she did it all by herself today.
