What I Ate Wednesday

It’s Wednesday again, and that means it’s time for another installment of What I Ate Wednesday! What I Ate Wednesday is a fun blog party hosted by Jenn at Peas and Crayons. After a few weeks of road trips and over indulging a little, I stayed home last week and ate in a more civilized manor. I kept track of what I ate on Thursday and Friday, and strangely, with the exception of dinner, I ate the exact same things both days. 

 

 Breakfast was a sprouted grain bagel covered in vegan cream cheese and pumpkin butter along with a sliced pear and a cup of tea. I’ve become a total tea addict lately – I just love teas of all kinds!

 

 Lunch was leftover curried pumpkin soup from Zel Allen’s Vegan For the Holidays. I’m not a big soup person, but this creamy soup is hearty and stew-like and is perfect for cool fall days.

 

 

Thursday was a busy day for me, so dinner was takeout tacos with a salad and guacamole. The tacos were stuffed with rice, black beans, lettuce and pico de gallo, and I added a little hot sauce and shredded Daiya. Delicious and healthy! 

  

On Friday I was in the mood for comfort food, so I made brinner (breakfast for dinner).  I cooked up some red flannel hash along with a tex-mex style tofu scramble. Perfect!

 

 Dessert both days was a healthy apple crumble along with a mug of hot Teechino. In addition to tea, I’ve become quite a Teechino addict lately too. It’s quite tasty!

    Oohhh, I’ve never thought of combining cream cheese and pumpkin butter but I will definitely be trying that now! Did you make the pumpkin butter or did you pick it up somewhere? Also, where on earth did you get those tacos? They look divine!
