I’ve devoted Thursdays during Vegan MoFo to cookbook reviews, but I’m a little behind in my cookbook cooking, so this week I’ve decided to give a book away instead! Nava Atlas was in the area speaking about her newest book Wild About Greens recently, so I had her sign a book for one lucky VeggieGirl reader. Leafy green vegetables are the most nutritious foods on the planet, and this book is a must have for creative and healthy recipes.
To enter, simply leave a comment on this post telling me what your favorite leafy green vegetable is. The winner will be picked at random and announced in a future post. The winner must live in the US, and the contest ends at midnight EST on Sunday, October 21st, 2012. Good luck!
Here I am with Nava at her signing.

My fav’s is a toss up between Arugula and Kale! And I NEEEED more ideas!!!
I love swiss chard because it’s gorgeous, tasty and perfectly replaces my gluten-filled tortilla wraps with green goodness.
Do I have to pick just one?! As a southern girl, I love collards. I’ve always cooked them in the traditional way (minus the ham and lard). I’d love some new ideas!
not to sound trendy but i am really into kale right now!
Swiss Chard is just the best on the planet. I just eat it sautéed with some garlic but I am thinking about ravioli filling this Fall.
So hard to decide … but I think I’m going to have to go with spinach. I use it in EVERYTHING!!
Baby kale — smoothied with a Colorado peach — yumyumyumyum
Kale followed by kale with a side of kale. We go through a few pounds of kale a week in our house.
Spinach has recently been pushed aside for Kale.
Kale is my favorite. Other than spinach occasionally, kale is really the only leafy green I eat.
I’d have to say arugula! One of my favorites, really. Other than that? Spinach and curly kale.
Spinach, I absolutely love a vegan spinach artichoke dip especially through the holidays.. yummmoz

Spinach. It’s easy, versatile and I can always find it. I eat it several times a week.
My favorite green is spinach!! I have loved spinach since I was a little tiny baby. Even before I knew anything about any other veggies I would cry for my mama to give me spinach as a kid growing up. Hehe!! Hope to win this crazy awesome book!
Southern Belle so collards top my list; easy to grow, harvest (cut the leaves off as needed, plant will continue to grow and give you more leaves to enjoy eating) and eat, either raw in a salad or used as a wrap, or cooked, sauteed with garlic, onions, maybe peppers, or in a casserole. Collards rule!
I tried swiss chard recently for the first time. Kale is King, but I love all greens. I need to learn more ways to cook them
and I would love this book . Great pic of author and blogger! Thanks for the opportunity to win.
I love spinach! I’m currently overseas and didn’t have the joy yet to taste fresh Kale, only frozen… I do look forward to get my hands on fresh kale once we’re back in the US though!
I like fresh spinach. I cook it in the microwave for 3 or 4 minutes with a small amount of water, in a covered glass bowl. I’ve tried canned spinach before but it doesn’t taste the same at all.
Baby lacinato! Trader Joe’s makes a blend of baby greens and it is so good!
I Love me some Kale. Especially in the form of Veggiegirl Kale Chips
I am wild about greens and I would love to read this book! I wish I could have made Ms. Atlas’ talk. My favorite leafy green is Kale. I enjoy trying new species (?) of kale in different recipes. I’d like to get more familiar with other types of leafy greens as well, to vary up my recipes! Thanks!
Collard greens and amaranth greens are my favorite greens.
I <3 collard greens!!!
Kale!!! I love it in kale salads, kale chips, chopped into soups or sauteed with garlic and tahini!

Kale is top of the list and I’m still in shock that I didn’t know what it was or ever had it up until 4 years ago. <3
Beet Greens …..I could eat them daily for the rest of my life! <3 <3 <3
I know, it’s overdone but Kale! I love Dino kale especially, in salads and soups or kale chips with ketchup. And I don’t know if this counts, but I love roasting okra and making okra “fries”!
