It’s Wednesday, so once again I’m doing the What I Ate Wednesday blog party hosted by Jenn at Peas and Crayons. This edition of What I Ate Wednesday isn’t going to be as interesting or inspiring as past posts. This week I’ve been working away like one of Santa’s elves making gifts for everyone on my list, so I haven’t had much time to cook anything elaborate. Here’s what I ate on Monday:
I started the day out with a smoothie and an apple. Somehow the apple didn’t make it into the photo. The smoothie was made with frozen blueberries, bananas, a handful of spinach and Vega One powder.
Dennis and I had some shopping to do, so we went to Rutherford Pancake House for lunch. As soon as we sat down Chef Spiro plopped a plate of fresh-from-the-oven scones on our table.
I ordered my favorite Popeye Tofu Scramble, which is made with spinach, tofu, soy sausage and avocado, and it came with a side of home fries.
