Happy Wednesday! It’s the first Wednesday of 2013 and my first What I Ate Wednesday of the year! This week I’m going show off what I ate over this past weekend, which was very snowy and cold. Snow days call for warming stews, lots of tea and cocoa, and DIY around the house!
Breakfast on both Saturday and Sunday was my signature Vegan McMuffin – soy sausage, tofu and Daiya cheese on a sprouted grain muffin – along with some fruit and tea.
Lunch on Saturday was leftover Boeufless Bourguignon, which I made on Friday night. The recipe is from Allyson Kramer’s upcoming book Great Gluten-Free Vegan Eats From Around the World. The book isn’t due in stores until June but I was a recipe tester for Allyson and I can guarantee you that it’s a great book!
…and slow cooker rustic potpie with a biscuit crust from Robin Robertson’s Fresh From the Vegan Slow Cooker. Perfect cold weather food!
There was lots of cocoa throughout the day!
Salad is usually a summer dish, but I felt the need for some raw greens, so Sunday’s lunch was a big salad with romaine, avocado, carrot, tomato, olives, baked tofu and toasted pistachios.
Sunday dinner was Thai Green Curry with Green Beans and Sweet Potatoes. The perfect meal to end a snowy weekend with!
And that DIY I mentioned? It was time to replace the old, tired fireplace accessories that came with my house. I got rid of the dated gold embellished screen put a nice new modern one in it’s place, and I bought a candelabra to replace the 1950s electric log that was inside the fireplace. (It consisted of an orange light bulb and a spinning ball of tin foil.) The hearth tiles were old and broken and the grout was cracked and loose, so Dennis and I pulled everything out and put in fancy new tiles. We still need to either caulk it or put some sort of frame around it to protect the tiles, and I plan on painting the inside of the fireplace as soon as I can get my hands on grey high-heat paint.
