Happy Wednesday! This week’s What I Ate Wednesday post showcases what I ate on Sunday.
The first meal of the day was a large breakfasty brunch at the Killer Vegan pop-up brunch in South Orange, NJ. Killer Vegan just started a weekly brunch buffet on Sundays and I wrote all about it on my Meatless Monday Devil Gourmet post this week. There was so much delicious food, including pancakes, home fries, scrambled tofu, vegan sausage, tempeh bacon, steamed greens, French toast and an amazing cashew gravy.
Because my breakfast was so big, I ended up having a couple midday snacks instead of an actually lunch meal. The first snack was strawberries with coconut yogurt, chopped nuts, toasted coconut chips and a dollop of Jem Nut Butter.
My second snack was a chopped apple with some NuttZo nut butter. I just bought the NuttZo from Vegan Cuts, and it’s pretty good. It’s a blend of 7 different nuts and seeds and is high in omega-3 fatty acids.
Dinner was a tofu and Basilicotta sandwich with a salad. Basilcotta is a delicious basil & cashew cheese that I bought from the Regal Vegan at the NYC Vegetarian Food Festival. It’s delicious on a sandwich!
